Today I made these little babies. I have plenty of ripe mangos and thought about the weather here in So Cal and thought these would be good to whip up because it’s a double refreshment: cold and mint. Both have a surplus in refreshing my taste buds because I absolutely love mint in anything when it’s summer! These popsicles are easy to make, i’m not even kidding.
Some loving action!
Here’s the recipe:
popsicle molds (plastic cups or dixie cups if you don’t have any)
popsicle sticks (I used skewers and they words great! Plus I was lazy to buy popsicle sticks haha!)
2 ripe mangos
1/2 plucked peppermints
1/4 cup non dairy milk (I used soy milk)
1 tbsp agave nectar or sweetener of your choice (more if you want it to be sweet, I don’t care for sweetness in this case, so this is just my preference)
Loosely chop peppermints and set aside.
Blend the rest of the ingredients until smooth. If you want it to be liquidy, add water.
Mix peppermints into the liquid and pour into preferred molds.
Place in freezer for 6 hours.
To take out of mold, run hot water outside the mold until popsicles become loose.
